Spring Greens with Grapefruit and Avocado

This was conceived and eaten within the last hour. Mmmm...
  • Mixed spring greens - lettuce, arugula, radicchio, baby spinach
  • Grapefruit - sliced
  • Avocado, skinned and sliced
  • Olives, black - a few
  • Goat's cheese, slices of
  1. Arrange on a dish or in a bowl, starting with the leaves and the rest on top.
For the dressing:
  • 2 tsp mustard
  • 1/3 cup olive oil, extra virgin
  • 1 tbsp white wine vinegar
  • 1/2 tsp garlic, chopped
  • handful fresh basil, torn into smallish bits
  • salt and pepper, dash of each
  1. Whisk all the above together till creamy
  2. Drizzle over the salad. :)
