An all-time favourite for the lunch box and after school, now with added protein. They are delectably squidgy and nut-scented :)
- plain flour, 2 cups
- almond meal, 1 cup
- white sugar, 1 cup,
- dark brown sugar, 1/2 cup
- butter, 1 1/4 cup
- eggs, 2, large
- vanilla, 1 tsp
- salt, 1/2 tsp
- baking powder, 1 tsp
- chocolate chunks or chips, 1 cup
- Preheat the oven to 375F, 170C
- Cream the sugar and butter till light and fluffy
- Add eggs and cream further
- Sift flour, salt and baking soda together
- Add flour mixture to creamed sugar/butter, in 3 parts
- Fold in the chocolate chips
- Bake for about 12 minutes, allow to cool on a rack

yummy! my friend's son who is autistic loves cookies. he is the older brother of the little darling on my FB profile pict. I'll try yr recipe when I have the time. how do you manage to send new batch into the oven while waiting for the baked ones to cool? do I need many trays? how about them sticking on the tray or breaking up when being lifted? my experience so far with cookies has been baking them in BIG pieces! to cut down on too many batches.. haha. some parts won't bake properly and would break or the smaller ones get burnt :( it's a time consuming process. btw, what's almond meal? not sure if it's available here.

Whoa, a lot of questions Jen, and thanks!
I did these in two batches, allowed the first to bake, then had a second load on ready on tray #2 (I only have two large cookie trays). A bit of Pam spray before you drop the cookies on the sheet will do the trick and make removal easier.
Also, allow them to cool for a bit - they crisp up, and then you could use a plastic spatula to lift them off.
You can get almond meal (aka ground almonds) probably at a local grocer? Or buy the skinned/blanched ones and grind them in a clean coffee grinder! Let me know how it all works out :D

Yes, we call almond meal as ground almond here. Next step, find time to bake these delicious cookies! Will let u know how they turn out and hopefully snap some picts as proof! ;)
