Blueberry Muffins


I just made these. They were beautiful and moist and best eaten as soon as possible.
  • 1 cup plain flour
  • 1 cup wholemeal flour
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1 cup sugar
  • 1/2 tsp salt
Sieve flour and other dry ingredients together into a large bowl.
  • 2 eggs
  • 1/2 cup yoghurt
  • 1/2 cup milk (buttermilk would be perfect)
  • 1/2 stick butter (1/2 cup), melted
  • 1 1/2 cups blueberries, fresh or frozen
  • 1 1/2 tsp vanilla essence
Streusel topping:
  • 2 tbsp cold butter, cubed
  • 1/4 cup sugar
  • 3 tbsp plain flour
  • 1/2 tsp cinnamon
  1. Beat eggs, with the butter, yoghurt and milk.
  2. Add vanilla essence.
  3. Combine wet ingredients into dry ingredients until it just comes together.
  4. Fold in blueberries.
  5. Scoop muffin mixture with ice cream scoop into oiled muffin pan.
  6. Sprinkle good heap of streusel topping over the top
  7. Bake in preheated 190C oven for 18-20 minutes or till a toothpick inserted comes out clean. Delumptious!

I'm not sure whether my weight refuse to go down is due to those beautiful pictures! It ain't easy to lose weight after hitting 4 x 10.. not that it's easier done when younger :(
Are you starting your own cook/bake book anytime soon? ;)

The pictures, I can proudly say, are fat and sugar free! As for the book, ahem.. I am just warming up. But thanks for the compliments :)
